Tomorrow, I am going to bake. I have ingredients for a variety of goodies, the house to myself in the evening and feel rather inspired some rather delicious muffins someone baked for church this morning.
I don’t think I’ve ever made proper American-style muffins – am more British, so tend towards buns and fairy cakes – but I have a muffin tray, a recipe book and quite a high level of determination. Ultimately, though, I don’t think there’s much difference, other than size. I suspect muffins are just supersized and somewhat more exotic fairy cakes.
Biscuits also always go down well in this house, as my other half has quite a substantial biscuit habit. I’ve made quite a bit of shortbread recently, which is incredibly easy and quite therapeutic, but I thought I might try making something a bit more cookie-esque.
In fact, when I think about it, after my buttermilk-pancake-fest, my sweet tooth seems to be somewhat transatlantically focussed. Cookies, muffins, pancakes… Not sure this is a good thing, althought they are all rather delicious. Perhaps should try something a bit more traditional – Parkin perhaps or Madeira cake.
